Dumpling Noodle Soup

INGREDIENTS:

• 1.5L halal chicken broth (or vegetable broth)
• 3 cloves garlic, lightly smashed
• 1-inch ginger, sliced
• 1 tbsp soy sauce (halal-certified)
• ½ tsp salt (to taste)
• 1 tsp sugar
• 200g egg noodles or wheat noodles
• 1 pack of dumplings

STEPS :

1. Prepare the Soup

1. In a pot, simmer chicken broth with garlic, ginger, soy sauce, salt, and sugar for 10 mins. Strain if desired.
2. Keep broth warm on low heat.

2. Cook Noodles & Dumplings

1. Boil noodles according to package instructions. Drain and divide into bowls.
2. In the same water, cook sui kow for 3-4 mins until they float. Remove with a slotted spoon.

3. Assemble

1. Ladle hot broth over noodles.
2. Add 3-4 sui kow per bowl.
3. Top with greens, fried shallots, spring onions, and chili.
4. Drizzle with garlic oil for extra flavor.
